Description

A ridiculously easy yet delicious creamy pasta using rotisserie chicken, perfect for those lazy cooking days.


Ingredients

  • 2 cups shredded rotisserie chicken
  • 8 oz pasta (penne or fettuccine)
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • 1 tbsp olive oil


Instructions

  1. Cook the pasta according to package instructions until al dente.
  2. Drain and set aside the pasta.
  3. In a large skillet, heat the olive oil over medium heat.
  4. Sauté minced garlic for about one minute until fragrant.
  5. Add the heavy cream and chicken broth to the skillet, stirring well, and let it simmer for about five minutes.
  6. Stir in the shredded chicken and fresh spinach, cooking until the spinach wilts, about two minutes.
  7. Combine cooked pasta with the sauce, tossing until everything is coated.
  8. Serve warm, garnished with freshly grated Parmesan cheese.
