Description

A comforting creamy potato soup that’s quick and easy to make, perfect for warming up on a cold day.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 4 slices of bacon, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chives or green onions for garnish


Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crispy.
  2. Add the chopped onion and sauté until translucent.
  3. Toss in the diced potatoes and pour in the broth. Bring everything to a boil.
  4. Reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
  5. Use a potato masher to mash the potatoes slightly for a creamy texture.
  6. Stir in the heavy cream, and season with salt and pepper.
  7. Heat through, garnish with chives or green onions, and serve.
