A warm and comforting creamy potato and sausage chowder that is quick and easy to prepare, perfect for chilly nights.


Ingredients

  • 1 pound sausage (Italian or your choice)
  • 4 medium potatoes, peeled and diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream or milk
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a large pot, cook the sausage over medium heat until browned, breaking it apart with a spoon.
  2. Add the onion and garlic, cooking until soft and fragrant.
  3. Stir in the diced potatoes and broth, bringing the mixture to a boil.
  4. Reduce heat and simmer until the potatoes are tender (about 15-20 minutes).
  5. Stir in the cream or milk, and season with salt and pepper. Adjust to taste.
  6. Cook for an additional 5 minutes, then serve hot, garnished with fresh parsley.

Notes

For a lighter version, use coconut milk or almond milk. You can also add additional veggies like corn, carrots, or celery.
