A warm and comforting creamy potato and sausage chowder that is quick and easy to prepare, perfect for chilly nights.
Ingredients
- 1 pound sausage (Italian or your choice)
- 4 medium potatoes, peeled and diced
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream or milk
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, cook the sausage over medium heat until browned, breaking it apart with a spoon.
- Add the onion and garlic, cooking until soft and fragrant.
- Stir in the diced potatoes and broth, bringing the mixture to a boil.
- Reduce heat and simmer until the potatoes are tender (about 15-20 minutes).
- Stir in the cream or milk, and season with salt and pepper. Adjust to taste.
- Cook for an additional 5 minutes, then serve hot, garnished with fresh parsley.
Notes
For a lighter version, use coconut milk or almond milk. You can also add additional veggies like corn, carrots, or celery.
