Description

This creamy potato cheese soup is comforting, quick to prepare, and delightfully cheesy, perfect for any night!


Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 cups extra sharp cheddar cheese, shredded
  • 4 slices bacon, cooked and crumbled
  • Chives, chopped for garnish
  • Salt and pepper, to taste


Instructions

  1. In a large pot, sauté the onion and garlic until translucent. Use a splash of oil or a knob of butter.
  2. Add the diced potatoes and broth and bring to a boil.
  3. Reduce heat and simmer until potatoes are tender, about 15 minutes.
  4. Use an immersion blender to purée the soup to desired consistency.
  5. Stir in the heavy cream and cheddar cheese until melted and smooth.
  6. Season with salt and pepper to taste.
  7. Serve hot topped with crumbled bacon and chives.
