Ingredients

  • 2 cups diced leftover ham
  • 4 cups potatoes, peeled and diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 medium onion, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onions, carrots, and celery, sautéing until softened.
  2. Stir in the diced ham and potatoes, cooking for a few more minutes.
