A comforting low-carb chicken casserole loaded with broccoli and bacon, perfect for a cozy weeknight dinner.
Ingredients
- 5 cups broccoli florets
- 8 slices cooked turkey bacon, chopped
- 4 cups cooked chicken, shredded or diced
- 3 cloves garlic, minced
- ½ cup shredded mozzarella
- ½ cup shredded cheddar
- 1 cup ranch dressing
- ½ cup shredded cheddar (for topping)
- ½ cup shredded mozzarella (for topping)
Instructions
- Preheat oven to 375°F and lightly grease a 9×13 inch baking dish.
- Steam or blanch broccoli until just tender, then drain well.
- In a large bowl, mix chicken, broccoli, turkey bacon, garlic, mozzarella, cheddar, and ranch dressing until well combined.
- Spread the mixture evenly in the greased baking dish.
- Sprinkle the top with additional cheddar and mozzarella.
- Bake for 25-30 minutes until hot and bubbly.
- Let it rest for 5-10 minutes before serving.
Notes
Feel free to substitute chicken with leftover grilled chicken or swap the turkey bacon for regular bacon. Letting the casserole rest before serving enhances the flavors.
