Description

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 2 lbs russet potatoes, peeled and cubed
  • 1/2 cup milk
  • Salt and black pepper to taste
  • 2 tablespoons chopped parsley (optional, for garnish)


Instructions

  1. Boil potatoes in salted water for 15-20 minutes until fork-tender. Drain and mash with butter, milk, salt, and pepper until smooth and creamy.
  2. While potatoes cook, heat olive oil in a large skillet over medium-high heat. Add shrimp and season with salt and pepper. Cook for 2-3 minutes per side until pink and cooked through. Remove shrimp and set aside.
  3. In the same skillet, reduce heat to medium and add minced garlic. Sauté for about 1 minute until fragrant.
  4. Pour in heavy cream and Parmesan cheese. Stir until cheese melts and the sauce is creamy. Simmer for 2-3 minutes, then return shrimp to the skillet and coat with the sauce.
  5. Serve creamy garlic shrimp over the mashed potatoes. Garnish with chopped parsley if desired.

Notes

Make sure to devein the shrimp for a cleaner taste. Adjust the amount of garlic depending on your preference.
