Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons unsalted butter
- 2 lbs russet potatoes, peeled and cubed
- 1/2 cup milk
- Salt and black pepper to taste
- 2 tablespoons chopped parsley (optional, for garnish)
Instructions
- Boil potatoes in salted water for 15-20 minutes until fork-tender. Drain and mash with butter, milk, salt, and pepper until smooth and creamy.
- While potatoes cook, heat olive oil in a large skillet over medium-high heat. Add shrimp and season with salt and pepper. Cook for 2-3 minutes per side until pink and cooked through. Remove shrimp and set aside.
- In the same skillet, reduce heat to medium and add minced garlic. Sauté for about 1 minute until fragrant.
- Pour in heavy cream and Parmesan cheese. Stir until cheese melts and the sauce is creamy. Simmer for 2-3 minutes, then return shrimp to the skillet and coat with the sauce.
- Serve creamy garlic shrimp over the mashed potatoes. Garnish with chopped parsley if desired.
Notes
Make sure to devein the shrimp for a cleaner taste. Adjust the amount of garlic depending on your preference.
