Description

A creamy and cheesy one-skillet dish featuring gnocchi, tender chicken, and crispy bacon, perfect for an easy weeknight dinner.


Ingredients

  • 3 to 4 boneless skinless chicken breasts (about 1 lb)
  • 16 oz fresh or frozen gnocchi
  • 8 oz cream cheese
  • 2 cups low sodium chicken broth
  • 4 cups fresh spinach
  • 1 cup shredded cheddar cheese
  • 1/2 cup crispy bacon bits
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste


Instructions

  1. Chop chicken into bite-sized pieces and season lightly with salt, pepper, garlic powder, and onion powder.
  2. Heat oil in a large skillet over medium-high heat and add chicken. Cook until golden brown, about 5 to 7 minutes.
  3. Lower heat and add cream cheese and chicken broth, stirring until smooth.
  4. Add gnocchi and spinach, cover, and simmer for 5 to 7 minutes until gnocchi are tender.
  5. Stir in shredded cheddar cheese and bacon bits until melted. Taste and adjust seasoning as needed.
  6. Serve hot in bowls garnished with extra cheese if desired.
