A warm and hearty soup packed with beef, beans, and spices, perfect for cozy weeknight dinners.
Ingredients
- 1 lb Ground Beef (or turkey or meat alternative)
- 1 large Onion (yellow or white)
- 3 cloves Garlic
- 4 cups Beef Broth (or vegetable broth)
- 14.5 oz Diced Tomatoes (canned)
- 1 cup Corn (canned or frozen)
- 15 oz Black Beans (drained and rinsed)
- 2 medium Potatoes (Yukon Gold or russet, diced small)
- 1 tbsp Smoked Paprika
- 1 tbsp Chili Powder
- 1 tsp Cumin
- 1 tsp Salt
- 0.5 tsp Black Pepper
- 1 cup Heavy Cream (or coconut milk)
- 1 cup Shredded Cheddar Cheese
Instructions
- In a large pot, brown the ground beef over medium heat, breaking it up with a spatula.
- Add the chopped onion and minced garlic. Sauté until the onions are soft, about 5 minutes.
- Pour in the beef broth and add the diced tomatoes, scraping the pot for flavor.
- Stir in the corn, black beans, and diced potatoes.
- Add the smoked paprika, chili powder, cumin, salt, and pepper. Mix until well coated.
- Bring to a gentle boil, then reduce heat and let it simmer for about 20 minutes.
- Once the potatoes are tender, stir in the heavy cream or coconut milk and heat through without boiling.
- Serve topped with shredded cheddar cheese.
