Description

A warm and hearty soup packed with beef, beans, and spices, perfect for cozy weeknight dinners.


Ingredients

  • 1 lb Ground Beef (or turkey or meat alternative)
  • 1 large Onion (yellow or white)
  • 3 cloves Garlic
  • 4 cups Beef Broth (or vegetable broth)
  • 14.5 oz Diced Tomatoes (canned)
  • 1 cup Corn (canned or frozen)
  • 15 oz Black Beans (drained and rinsed)
  • 2 medium Potatoes (Yukon Gold or russet, diced small)
  • 1 tbsp Smoked Paprika
  • 1 tbsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 1 cup Heavy Cream (or coconut milk)
  • 1 cup Shredded Cheddar Cheese


Instructions

  1. In a large pot, brown the ground beef over medium heat, breaking it up with a spatula.
  2. Add the chopped onion and minced garlic. Sauté until the onions are soft, about 5 minutes.
  3. Pour in the beef broth and add the diced tomatoes, scraping the pot for flavor.
  4. Stir in the corn, black beans, and diced potatoes.
  5. Add the smoked paprika, chili powder, cumin, salt, and pepper. Mix until well coated.
  6. Bring to a gentle boil, then reduce heat and let it simmer for about 20 minutes.
  7. Once the potatoes are tender, stir in the heavy cream or coconut milk and heat through without boiling.
  8. Serve topped with shredded cheddar cheese.
