A creamy and satisfying one-pan chicken dish made with coconut milk, garlic, and ginger that’s simple and delicious.
Ingredients
- 1 lb chicken breast or thighs
- 1 can coconut milk
- 3 cloves garlic, minced
- 1 tbsp ginger, minced
- Salt and pepper, to taste
- 2 tbsp olive oil or butter
- Fresh cilantro or parsley, for garnish
Instructions
- Heat olive oil or butter in a large skillet over medium heat.
- Season the chicken with salt and pepper.
- Add the chicken to the skillet and cook until browned on both sides, about 5-7 minutes.
- Add minced garlic and ginger to the skillet, sauté for 1-2 minutes.
- Pour in the coconut milk and stir to combine.
- Reduce the heat and let simmer until the chicken is cooked through and the sauce has thickened, about 10-15 minutes.
- Garnish with chopped cilantro or parsley before serving.
Notes
Serve with rice or a side of veggies for a complete meal. Can be made ahead and reheated.
