Ingredients

  • 1 cup orzo pasta
  • 2 cups cooked chicken, shredded
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a large skillet, heat olive oil over medium heat. Add onions and garlic, and sauté until soft.
  2. Stir in the mixed vegetables and cook for an additional 3-4 minutes.
  3. Add the cooked chicken, broth, and thyme to the skillet, and bring to a boil.
  4. Stir in the orzo and reduce heat to a simmer. Cook according to package instructions until the orzo is tender.
  5. Once the orzo is cooked, stir in the heavy cream and season with salt and pepper. Cook for another 2-3 minutes until heated through.

Notes

For a healthier option, substitute heavy cream with coconut milk. Use leftover rotisserie chicken for easier prep.
