Ingredients
- 1 cup orzo pasta
- 2 cups cooked chicken, shredded
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup mixed vegetables (carrots, peas, corn)
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large skillet, heat olive oil over medium heat. Add onions and garlic, and sauté until soft.
- Stir in the mixed vegetables and cook for an additional 3-4 minutes.
- Add the cooked chicken, broth, and thyme to the skillet, and bring to a boil.
- Stir in the orzo and reduce heat to a simmer. Cook according to package instructions until the orzo is tender.
- Once the orzo is cooked, stir in the heavy cream and season with salt and pepper. Cook for another 2-3 minutes until heated through.
- Garnish with fresh parsley before serving.
Notes
For a healthier option, substitute heavy cream with coconut milk. Use leftover rotisserie chicken for easier prep.
