Ingredients

  • 8 oz pasta (fettuccine or linguine)
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Cook the pasta according to package directions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the onion and sauté until translucent.
  3. Add the garlic and shrimp to the skillet, cooking until the shrimp are pink and opaque.
  4. Sprinkle the Cajun seasoning over the shrimp and stir well.
  5. Pour in the chicken broth and bring to a simmer.
  6. Reduce the heat and stir in the heavy cream and Parmesan cheese until creamy.
  7. Add the cooked pasta to the skillet and toss to coat.

Notes

For added flavor, let the shrimp marinate in the Cajun seasoning for 15-20 minutes before cooking. Don’t overcook the shrimp; they just need to be pink and opaque to be perfectly tender.
