A creamy, hearty potato soup with sausage that cooks effortlessly in a crockpot.
Ingredients
- 4 cups potatoes, diced
- 1 pound sausage, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Chives or green onions for garnish
Instructions
- In a crockpot, combine the diced potatoes, sliced sausage, chopped onion, minced garlic, and chicken broth.
- Cook on low for 6-8 hours or high for 3-4 hours until the potatoes are tender.
- Stir in the heavy cream and season with salt and pepper.
- Serve hot, garnished with chives or green onions.
Notes
For a vegetarian version, substitute sausage with beans and use vegetable broth.
