Description

A creamy, high-protein, one-dish wonder that’s easy to make and perfect for weeknight dinners.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup cottage cheese
  • ¼ cup grated Parmesan cheese
  • ¼ cup chicken broth
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Olive oil spray
  • Optional garnish: chopped parsley or chives


Instructions

  1. Preheat the oven to 375°F (190°C) and lightly spray an 8×8-inch baking dish with olive oil.
  2. Blend the cottage cheese, Parmesan, chicken broth, garlic powder, onion powder, smoked paprika, salt, and pepper until smooth.
  3. Place the chicken breasts in the baking dish and pour the creamy sauce evenly over them.
  4. Bake uncovered for about 30 to 35 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  5. Allow to rest for 5 minutes before serving, optionally garnishing with parsley or chives.

Notes

Feel free to substitute cottage cheese with Greek yogurt and adjust spices to taste.
