Comforting and hearty stuffed peppers filled with a savory beef and rice mixture, perfect for family dinners or meal prep.
Ingredients
- 4 bell peppers
- 1 pound ground beef
- 1 cup cooked rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup diced tomatoes
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon Italian seasoning
- 1 cup shredded cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds and membranes.
- In a skillet, brown the ground beef over medium heat. Add chopped onion and minced garlic and sauté until beef is fully cooked and onions are translucent.
- Stir in cooked rice, diced tomatoes, salt, pepper, and Italian seasoning. Allow to simmer for 5 minutes.
- Fill each bell pepper with the beef mixture, packing it down gently.
- Place in a baking dish, cover with foil, and bake for 30 minutes.
- After 30 minutes, remove foil and sprinkle cheese on top. Bake for an additional 10-15 minutes until cheese is melted and bubbly.
- Let cool briefly before serving.
Notes
Stuffed peppers can be stored in the refrigerator for 3-4 days and frozen for up to 2 months.
