Description

Comforting and hearty stuffed peppers filled with a savory beef and rice mixture, perfect for family dinners or meal prep.


Ingredients

  • 4 bell peppers
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon Italian seasoning
  • 1 cup shredded cheese


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds and membranes.
  3. In a skillet, brown the ground beef over medium heat. Add chopped onion and minced garlic and sauté until beef is fully cooked and onions are translucent.
  4. Stir in cooked rice, diced tomatoes, salt, pepper, and Italian seasoning. Allow to simmer for 5 minutes.
  5. Fill each bell pepper with the beef mixture, packing it down gently.
  6. Place in a baking dish, cover with foil, and bake for 30 minutes.
  7. After 30 minutes, remove foil and sprinkle cheese on top. Bake for an additional 10-15 minutes until cheese is melted and bubbly.
  8. Let cool briefly before serving.

Notes

Stuffed peppers can be stored in the refrigerator for 3-4 days and frozen for up to 2 months.
