Description

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeño, diced (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 6 cups chicken broth
  • 2 cans (14.5 ounces each) diced tomatoes
  • 2 cups cooked chicken, shredded
  • 1 cup corn
  • Salt and pepper to taste
  • Tortilla strips or chips, for serving
  • Avocado, diced, for topping
  • Fresh cilantro, chopped, for garnish
  • Lime wedges, for serving


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion, garlic, red bell pepper, and jalapeño (if using) to the pot. Sauté until vegetables are softened, about 5 minutes.
  3. Stir in ground cumin and chili powder, cooking for another minute until fragrant.
  4. Pour in the chicken broth and add diced tomatoes with their juices. Bring to a boil.
  5. Lower the heat and add shredded chicken and corn. Simmer for about 10-15 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped with tortilla strips, diced avocado, fresh cilantro, and lime wedges.
