Description

These Classic Blueberry Streusel Muffins are fluffy, fruity, and topped with a crunchy streusel, making them a perfect treat for breakfast, brunch, or any time you need a sweet pick-me-up.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries
  • 1/2 cup brown sugar
  • 1/2 cup oats
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together melted butter, milk, eggs, and vanilla extract.
  4. Pour wet ingredients into dry ingredients and mix until just combined.
  5. Gently fold in blueberries.
  6. In a small bowl, mix brown sugar, oats, and cinnamon for the streusel topping.
  7. Fill each muffin cup with batter and sprinkle the streusel over the top.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let cool before serving.

Notes

Avoid overmixing the batter to keep muffins fluffy. You can use frozen blueberries instead of fresh, but do not thaw them.
