Ingredients
- 1 cup rolled oats
- 1 cup milk (or almond milk)
- 1 cup all-purpose flour

- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a bowl, combine the rolled oats and milk; let sit for about 10 minutes.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, mix the melted butter, eggs, and vanilla extract; then add the oat mixture.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Fold in the blueberries gently.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool for a few minutes before transferring to a wire rack.
