Ingredients

  • 1 lb beef sirloin or tenderloin, sliced thin
  • 2 tbsp all-purpose flour
  • Salt and pepper, to taste
  • 8 oz egg noodles
  • 2 tbsp unsalted butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz cremini or white button mushrooms, sliced
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tsp hot paprika (optional)
  • 1 cup sour cream
  • Fresh parsley, chopped for garnish


Instructions

  1. In a bowl, toss the sliced beef with flour, salt, and pepper.
  2. Cook egg noodles according to package instructions, drain, and keep warm.
  3. In a large skillet, melt butter over medium heat. Sauté onions until softened, then add garlic and cook until fragrant.
  4. Add mushrooms to the skillet and cook until browned and their moisture evaporates.
  5. Push the mushroom mixture aside, increase heat, and add beef in a single layer. Sear for 1-2 minutes, then stir until cooked through.
  6. Pour in beef broth, Worcestershire sauce, mustard, and paprika, scraping up any browned bits. Simmer for 3-4 minutes.
  7. Reduce heat to low and stir in sour cream, cooking until heated through. Do not let the sauce boil.
  8. Serve over egg noodles and garnish with chopped parsley.

Notes

For added flavor, consider marinating the beef before cooking.
