Ingredients
- 1 lb beef sirloin or tenderloin, sliced thin
- 2 tbsp all-purpose flour
- Salt and pepper, to taste
- 8 oz egg noodles
- 2 tbsp unsalted butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 8 oz cremini or white button mushrooms, sliced
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
- 1 tsp hot paprika (optional)
- 1 cup sour cream
- Fresh parsley, chopped for garnish
Instructions
- In a bowl, toss the sliced beef with flour, salt, and pepper.
- Cook egg noodles according to package instructions, drain, and keep warm.
- In a large skillet, melt butter over medium heat. Sauté onions until softened, then add garlic and cook until fragrant.
- Add mushrooms to the skillet and cook until browned and their moisture evaporates.
- Push the mushroom mixture aside, increase heat, and add beef in a single layer. Sear for 1-2 minutes, then stir until cooked through.
- Pour in beef broth, Worcestershire sauce, mustard, and paprika, scraping up any browned bits. Simmer for 3-4 minutes.
- Reduce heat to low and stir in sour cream, cooking until heated through. Do not let the sauce boil.
- Serve over egg noodles and garnish with chopped parsley.
Notes
For added flavor, consider marinating the beef before cooking.
