Description

Delightful holiday dessert that features a rich chocolate cake rolled with creamy filling, resembling an enchanted log.


Ingredients

  • 4 large eggs
  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 8 oz semi-sweet chocolate, chopped
  • 1/2 cup butter
  • Powdered sugar for dusting
  • Fresh cranberries for garnish


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 15×10 inch jelly roll pan. Line with parchment paper.
  2. In a mixing bowl, beat eggs and granulated sugar together until thick and pale.
  3. Sift flour, cocoa powder, and salt together and gently fold into the egg mixture.
  4. Pour the batter into the prepared pan and spread evenly.
  5. Bake for 12-15 minutes or until the sponge springs back when touched.
  6. Remove from the oven and immediately roll the cake with the parchment paper from the short end. Allow it to cool.
  7. In another bowl, whip heavy cream and powdered sugar until soft peaks form.
  8. Melt chocolate and butter together until smooth. Allow to cool slightly.
  9. Unroll the cooled sponge and spread whipped cream over it. Roll it back up gently and place seam side down on a serving platter.
  10. Spread the chocolate ganache over the log and decorate with powdered sugar and cranberries to mimic a log.
  11. Chill before serving.

Notes

Use room-temperature eggs for better volume. Experiment with fillings to create unique flavors.
