Description

A rich and aromatic North African dish made with chicken, dried fruits, and spices, slow-cooked in a traditional tagine for a comforting family meal.


Ingredients

  • 2 pounds of chicken thighs or drumsticks
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • 1 cup of chicken broth
  • 1 cup of dried apricots
  • 1/2 cup of raisins
  • 1/2 cup of toasted almonds
  • 2 tablespoons of olive oil
  • Fresh cilantro or parsley for garnish


Instructions

  1. In a large pot or traditional tagine, heat the olive oil over medium heat. Add the chopped onion and cook until translucent.
  2. Add the minced garlic, ground spices, and cook for 1-2 minutes until fragrant.
  3. Season the chicken with salt and pepper and brown on all sides in the pot.
  4. Pour in the chicken broth and add the dried apricots and raisins. Stir to combine.
  5. Cover and reduce heat to low. Let it simmer for 45 minutes to 1 hour.
  6. Just before serving, stir in the toasted almonds for extra crunch.
  7. Garnish with fresh cilantro or parsley before serving.

Notes

This dish pairs wonderfully with couscous or warm crusty bread. For leftovers, refrigerate for 3-4 days or freeze for up to 2 months.
