Description
A rich and aromatic North African dish made with chicken, dried fruits, and spices, slow-cooked in a traditional tagine for a comforting family meal.
Ingredients
- 2 pounds of chicken thighs or drumsticks
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- Salt and pepper to taste
- 1 cup of chicken broth
- 1 cup of dried apricots
- 1/2 cup of raisins
- 1/2 cup of toasted almonds
- 2 tablespoons of olive oil
- Fresh cilantro or parsley for garnish
Instructions
- In a large pot or traditional tagine, heat the olive oil over medium heat. Add the chopped onion and cook until translucent.
- Add the minced garlic, ground spices, and cook for 1-2 minutes until fragrant.
- Season the chicken with salt and pepper and brown on all sides in the pot.
- Pour in the chicken broth and add the dried apricots and raisins. Stir to combine.
- Cover and reduce heat to low. Let it simmer for 45 minutes to 1 hour.
- Just before serving, stir in the toasted almonds for extra crunch.
- Garnish with fresh cilantro or parsley before serving.
Notes
This dish pairs wonderfully with couscous or warm crusty bread. For leftovers, refrigerate for 3-4 days or freeze for up to 2 months.
