Description

Cozy Chicken Potato Soup that’s easy to make and full of comforting flavors, perfect for chilly nights.


Ingredients

  • 4 cups chicken broth
  • 2 cups diced cooked chicken
  • 3 medium potatoes, peeled and diced
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 3 cloves garlic, minced
  • 1 tsp fresh thyme leaves or 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 cup heavy cream
  • 2 tbsp fresh parsley, chopped for garnish


Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add onions, carrots, celery, and garlic, sauté for about 5 minutes until softened.
  3. Add diced potatoes and thyme, stirring to combine.
  4. Pour in chicken broth and bring to a boil; then reduce heat to a simmer.
  5. Let simmer for around 15 minutes until potatoes are fork-tender.
  6. Stir in cooked chicken, season with salt and pepper, and simmer for another 5 minutes.
  7. Add heavy cream and warm through without boiling.
  8. Taste and adjust seasoning as needed.
  9. Serve hot, garnished with fresh parsley.

Notes

For a lighter version, substitute heavy cream with half-and-half or coconut milk. Can also use vegetable broth for a vegetarian version.
