Description

A quick and easy Chicken Parmesan Casserole that combines the flavors of classic Chicken Parmesan with the convenience of a one-dish meal.


Ingredients

  • 4 cups cooked chicken, shredded
  • 2 cups marinara sauce
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 2 cups cooked pasta (penne or rotini)
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • to taste salt
  • to taste pepper
  • for garnish fresh basil or parsley (optional)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the shredded chicken, garlic powder, Italian seasoning, salt, and pepper. Stir to combine and warm through for about 5 minutes.
  3. In a mixing bowl, toss together the cooked pasta, marinara sauce, half of the Parmesan cheese, and half of the mozzarella cheese.
  4. Add the seasoned chicken to the pasta mixture and fold together.
  5. Pour the casserole mixture into a greased 9×13-inch baking dish and spread evenly.
  6. Top with the remaining mozzarella and Parmesan cheese.
  7. Cover with aluminum foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden brown.
  9. Let it cool for a few minutes before garnishing with fresh basil or parsley.
  10. Serve warm and enjoy!

Notes

For a vegetarian version, substitute chicken with tofu or vegetables.
