Description

Crispy and golden burritos filled with flavorful chicken, creamy cheese, and savory beans.


Ingredients

  • 4 flour tortillas
  • 2 cups cooked chicken, shredded
  • 1 cup cheese, shredded (cheddar or Mexican blend)
  • 1 cup refried beans
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Oil for frying
  • Sour cream for serving
  • Salsa for serving


Instructions

  1. In a large mixing bowl, combine shredded chicken, refried beans, cheese, chili powder, cumin, salt, and pepper until well mixed.
  2. Lay a tortilla flat and place a generous amount of the chicken mixture in the center.
  3. Fold the sides of the tortilla inward and roll tightly from the bottom to enclose the filling.
  4. Heat oil in a deep skillet over medium heat until it sizzles when a small piece of tortilla is dropped in.
  5. Carefully place chimichangas in the hot oil and fry until golden brown and crispy, about 3-4 minutes on each side.
  6. Remove from oil and drain on paper towels. Serve hot with sour cream and salsa.

Notes

Make sure the oil is hot enough to ensure a crispy exterior. Avoid overfilling the tortillas to prevent difficulty in rolling.
