Crispy and golden burritos filled with flavorful chicken, creamy cheese, and savory beans.
Ingredients
- 4 flour tortillas
- 2 cups cooked chicken, shredded
- 1 cup cheese, shredded (cheddar or Mexican blend)
- 1 cup refried beans
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Oil for frying
- Sour cream for serving
- Salsa for serving
Instructions
- In a large mixing bowl, combine shredded chicken, refried beans, cheese, chili powder, cumin, salt, and pepper until well mixed.
- Lay a tortilla flat and place a generous amount of the chicken mixture in the center.
- Fold the sides of the tortilla inward and roll tightly from the bottom to enclose the filling.
- Heat oil in a deep skillet over medium heat until it sizzles when a small piece of tortilla is dropped in.
- Carefully place chimichangas in the hot oil and fry until golden brown and crispy, about 3-4 minutes on each side.
- Remove from oil and drain on paper towels. Serve hot with sour cream and salsa.
Notes
Make sure the oil is hot enough to ensure a crispy exterior. Avoid overfilling the tortillas to prevent difficulty in rolling.
