A delectable cheesecake featuring fresh cherries and crunchy pistachios, perfect for any special occasion or a delightful treat.
Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sour cream
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/2 cup pistachio nuts, finely chopped
- 1 cup cherries, pitted and halved
- 1/4 cup cherry preserves or jam
Instructions
- Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
- In a bowl, combine graham cracker crumbs and melted butter; press the mixture into the bottom of the prepared pan.
- In a large mixing bowl, beat cream cheese until smooth, then add sour cream, sugar, and vanilla, mixing until combined. Stir in the chopped pistachios.
- Pour the filling over the crust in the springform pan.
- Bake for 50-60 minutes or until the center is set.
- Remove from the oven and allow to cool to room temperature.
- Once cooled, spread the cherry preserves over the top and arrange the halved cherries.
- Refrigerate for at least 4 hours before serving.
Notes
For best results, make the cheesecake a day in advance to enhance the flavors.
