Description

A delectable cheesecake featuring fresh cherries and crunchy pistachios, perfect for any special occasion or a delightful treat.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sour cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup pistachio nuts, finely chopped
  • 1 cup cherries, pitted and halved
  • 1/4 cup cherry preserves or jam


Instructions

  1. Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. In a bowl, combine graham cracker crumbs and melted butter; press the mixture into the bottom of the prepared pan.
  3. In a large mixing bowl, beat cream cheese until smooth, then add sour cream, sugar, and vanilla, mixing until combined. Stir in the chopped pistachios.
  4. Pour the filling over the crust in the springform pan.
  5. Bake for 50-60 minutes or until the center is set.
  6. Remove from the oven and allow to cool to room temperature.
  7. Once cooled, spread the cherry preserves over the top and arrange the halved cherries.
  8. Refrigerate for at least 4 hours before serving.

Notes

For best results, make the cheesecake a day in advance to enhance the flavors.
