Description

Deliciously easy burritos filled with crispy tater tots, seasoned beef, and lots of cheese.

Ingredients

  • 1 pound ground beef
  • 2 cups frozen tater tots
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey jack cheese
  • 1/2 cup sour cream
  • 1/4 cup Taco Bell chipotle sauce
  • 6 large flour tortilla wraps
  • Salt and pepper to taste
  • Diced tomatoes (for garnish)
  • Chopped green onions (for garnish)
  • Cilantro (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cook the frozen tater tots according to the package instructions until golden and crispy.
  3. In a skillet over medium heat, brown the ground beef with salt and pepper until no longer pink. Drain excess grease.
  4. In a large mixing bowl, combine the cooked beef, crispy tater tots (slightly crushed), cheddar cheese, and Monterey jack cheese. Mix thoroughly.
  5. Warm the flour tortillas in a dry skillet or microwave them for 10-15 seconds.
  6. Spoon filling onto the center of each tortilla, drizzling with chipotle sauce and adding a dollop of sour cream.
  7. Fold the sides over the filling and roll tightly to form a burrito.
  8. Place burritos seam side down in a baking dish and sprinkle with additional shredded cheese.
  9. Bake for 5-7 minutes until cheese melts and bubbles.
  10. Garnish with diced tomatoes, green onions, and cilantro if desired. Serve hot with extra sour cream and chipotle sauce.
