Description

Delicious and easy-to-make burritos filled with crispy tater tots, gooey cheese, and your choice of meat or a veggie substitute.


Ingredients

  • 1 pound ground beef (or turkey, chicken, or plant-based alternative)
  • 2 cups frozen tater tots
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1/4 cup Taco Bell chipotle sauce
  • 6 large flour tortilla wraps
  • Salt and pepper to taste
  • Optional: diced tomatoes, chopped green onions, cilantro


Instructions

  1. Preheat your oven to 350°F.
  2. Cook the frozen tater tots according to the package instructions until golden and crispy.
  3. In a skillet over medium heat, brown the ground beef, sprinkling with salt and pepper. Drain excess grease.
  4. In a large mixing bowl, combine the cooked ground beef, crispy tater tots, shredded cheddar cheese, and Monterey Jack cheese. Mix well.
  5. Warm the flour tortillas in a dry skillet or microwave for 10-15 seconds.
  6. Spoon the filling mixture onto the center of each tortilla, drizzle with chipotle sauce, and add a dollop of sour cream.
  7. Fold the sides of the tortilla over the filling, then roll tightly.
  8. Place the burritos seam side down in a baking dish, sprinkle cheese on top, and bake for 5-7 minutes until the cheese melts and bubbles.
  9. Garnish with optional toppings and serve hot with extra sour cream and chipotle sauce.
