Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, peeled and diced
  • 4 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 cup heavy cream
  • 1 tbsp olive oil
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat, add diced onion and minced garlic, and cook until softened (3-4 minutes).
  2. Add ground beef, breaking it up as it cooks, and stir until browned. Drain excess grease.
  3. Stir in diced potatoes and chicken broth, bring to a boil, then reduce heat to low and simmer until potatoes are tender (15-20 minutes).
  4. Pour in milk and heavy cream, stirring to combine, and heat through without boiling.
