Ingredients
- 2 cups diced potatoes
- 1 cup diced ham
- 1 onion, chopped
- 3 cups chicken broth
- 1 cup shredded cheddar cheese
- 1 cup milk
- 2 tablespoons butter
- Salt and pepper to taste
- Optional: chopped green onions for garnish
Instructions
- In a large pot, melt butter over medium heat and sauté onions until soft.
- Add diced ham and cook for a few minutes.
- Add diced potatoes and chicken broth, bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
- Stir in milk and cheese, and cook until cheese is melted.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped green onions if desired.
Notes
For a bolder flavor, use sharper cheddar cheese. Adjust seasoning carefully since ham and broth already add salt.
