Description

Cheesy beef chimichangas filled with seasoned ground beef and gooey cheese, perfect for family gatherings or cozy dinners.

Ingredients

  • 2 cups seasoned ground beef
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 4 large flour tortillas
  • 1 cup salsa
  • 1 cup sour cream (for serving)
  • Fresh toppings like lettuce, tomatoes, and jalapeños (optional)
  • Oil spray or butter (for brushing)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix the seasoned ground beef with the shredded cheese until well combined.
  3. Place about 1/2 cup of the beef and cheese mixture in the center of each tortilla.
  4. Fold the sides of the tortilla over the filling and then roll up tightly to enclose the filling completely.
  5. Place the chimichangas seam-side down on a baking sheet.
  6. Brush or spray the tops with oil or butter for a crispy finish.
  7. Bake for 20-25 minutes or until golden brown and crispy.
  8. Serve with salsa and sour cream, and top with fresh toppings if desired.

Notes

For an extra cheesy flavor, mix in some cream cheese with your shredded cheese. Let the chimichangas cool for a few minutes before serving.
