Description

A creamy, cheesy, and hearty beef and potato soup that warms your soul with every spoonful.


Ingredients

  • 1 lb ground beef
  • 2 cups diced potatoes
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
  2. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
  3. Stir in the diced potatoes and beef broth. Bring to a boil.
  4. Reduce the heat and simmer until the potatoes are tender, about 15-20 minutes.
  5. Once cooked, stir in the heavy cream and shredded cheddar until melted and combined.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with additional cheese and fresh parsley.

Notes

For a lighter version, substitute ground turkey. Optional: Add carrots or celery for extra veggies.
