Ingredients
- 4 Carrots, chopped
- 2 Potatoes, chopped
- 1 Onion, chopped
- 3 cloves Garlic, minced
- 4 cups Vegetable broth
- Salt and Pepper, to taste
- 2 tbsp Olive oil
Instructions
- In a large pot, heat the olive oil over medium heat until shimmering.
- Add chopped onions and minced garlic, and sauté until translucent.
- Toss in chopped carrots and potatoes, stirring for a few minutes.
- Pour in enough vegetable broth to cover the veggies.
- Bring to a boil, then reduce heat and simmer until vegetables are tender.
- Blend the soup until smooth using an immersion blender.
- Season with salt and pepper to taste before serving hot.
