Description

A delicious one-pot meal that combines chicken, orzo, and vibrant spices for a comforting dish that’s easy to prepare.


Ingredients

  • 2 chicken breasts
  • 1 cup orzo pasta
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Cajun seasoning
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil
  • Fresh parsley for garnish


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Season chicken with salt, pepper, and Cajun seasoning, then cook in the pot until browned, about 6-7 minutes per side. Remove and set aside.
  3. Add onion, bell pepper, and garlic to the pot, sauté until soft, about 5 minutes.
  4. Add orzo, stirring for 1-2 minutes to toast.
  5. Pour in chicken broth, bring to boil, reduce heat, cover, and simmer for about 10 minutes or until orzo is cooked.
  6. Stir in heavy cream, slice the chicken, add back to the pot, and mix well.
  7. Garnish with fresh parsley and serve.
