A delicious one-pot meal that combines chicken, orzo, and vibrant spices for a comforting dish that’s easy to prepare.
Ingredients
- 2 chicken breasts
- 1 cup orzo pasta
- 1 cup chicken broth
- 1 cup heavy cream
- 1 teaspoon Cajun seasoning
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Season chicken with salt, pepper, and Cajun seasoning, then cook in the pot until browned, about 6-7 minutes per side. Remove and set aside.
- Add onion, bell pepper, and garlic to the pot, sauté until soft, about 5 minutes.
- Add orzo, stirring for 1-2 minutes to toast.
- Pour in chicken broth, bring to boil, reduce heat, cover, and simmer for about 10 minutes or until orzo is cooked.
- Stir in heavy cream, slice the chicken, add back to the pot, and mix well.
- Garnish with fresh parsley and serve.
