Ingredients
- 1 small head of green cabbage, chopped
- 4 red potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup light cream
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until soft.
- Add the chopped cabbage and diced potatoes, stirring to combine.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and let simmer for about 20-25 minutes, or until the potatoes are tender.
- Stir in the light cream, and season with salt and pepper.
- Serve warm and enjoy your comforting soup!
Notes
For a dairy-free option, substitute light cream with coconut milk. Leftovers can be reheated gently on the stove.
