Ingredients
- 1-2 tablespoons butter
- 1 onion, diced
- 2 medium carrots, diced
- 3 cloves garlic, minced
- 4 cups chicken stock (or vegetable stock)
- ¼ cup cornstarch
- 1 cup milk
- 2 large potatoes, peeled and cubed
- 16 ounces broccoli florets
- 1½ cups shredded sharp cheddar cheese
- ½ teaspoon salt
- ¼ teaspoon ground pepper
Instructions
- Melt butter in a skillet over medium-high heat.
- Sauté onion in the butter until soft, about 3 minutes.
- Add carrots, salt, and pepper; cook for another 3-4 minutes.
- Toss in garlic and sauté for about 30 seconds.
- Add potatoes and chicken stock; cover and simmer for about 10 minutes.
- Add broccoli and simmer until tender, about 10 minutes.
- In a bowl, mix cornstarch with milk until smooth, then stir into the soup.
- Add cheese and stir until melted.
- Serve hot, optionally topped with extra cheese.
