Quick and easy blueberry oatmeal muffins that are delicious and somewhat healthy, perfect for any time.
Ingredients
- 1 cup rolled oats
- 1 cup milk
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 cup vegetable oil
- 1 large egg
- 1 cup fresh blueberries
Instructions
- Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.
- In a bowl, combine the rolled oats and milk. Let it sit for about 10 minutes.
- In another bowl, mix together the flour, sugar, baking powder, salt, and cinnamon.
- In the oats mixture, add the vegetable oil and egg, and mix well.
- Combine the wet and dry ingredients until just moistened.
- Gently fold in the blueberries.
- Spoon the batter into the muffin tin, filling each cup about two-thirds full.
- Bake for 18 to 20 minutes or until a toothpick inserted comes out clean.
- Let them cool slightly before serving.
Notes
These muffins freeze beautifully. Feel free to substitute ingredients based on your pantry.
