Simple and delicious blueberry oatmeal muffins that are perfect for a quick breakfast or snack.
Ingredients
- 1 cup rolled oats
- 1 cup milk
- 1/2 cup flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 cup vegetable oil
- 1 large egg
- 1 cup fresh or frozen blueberries
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a bowl, combine rolled oats and milk; let it sit for about 10 minutes.
- In another bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
- Add the oat mixture, vegetable oil, and egg to the dry ingredients and stir until just combined.
- Gently fold in the blueberries.
- Fill the muffin cups about 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool for a few minutes before transferring to a wire rack.
