Description

Chewy, fruity cookies made with oats and blueberries, perfect for breakfast, snacks, or dessert.


Ingredients

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh or frozen blueberries


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, mix the rolled oats, flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until well combined.
  6. Gently fold in the blueberries.
  7. Drop spoonfuls of the dough onto the prepared baking sheet, spacing them apart.
  8. Bake for 10-12 minutes or until the edges are golden.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

These cookies can be stored in an airtight container for about a week and are also freezer-friendly.
