Delicious and easy-to-make blueberry oatmeal cookies that are perfect for a lazy day treat.
Ingredients
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup blueberries (fresh or frozen)
- Optional: 1/2 teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, brown sugar, and white sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the rolled oats, flour, baking soda, salt, and cinnamon (if using).
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Gently fold in the blueberries.
- Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Avoid overbaking to ensure chewy cookies. Experiment with different mix-ins as desired.
