Description

Delicious and easy blueberry oatmeal bars that will satisfy your sweet tooth without requiring hours in the kitchen.


Ingredients

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup butter, melted
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup blueberries
  • 1/4 cup sugar (for topping)
  • 1 tablespoon lemon juice


Instructions

  1. Preheat the oven to 350°F. Grease an 8-inch square baking pan.
  2. In a bowl, mix oats, flour, brown sugar, baking powder, and salt. Stir in the melted butter until combined.
  3. Press half of the mixture into the bottom of the prepared pan to form a crust.
  4. In another bowl, combine blueberries, sugar, and lemon juice, then pour over the crust.
  5. Sprinkle remaining oat mixture over the blueberry filling.
  6. Bake for 25-30 minutes, or until the topping is golden brown.
  7. Let cool before slicing into bars.

Notes

For variations, you can substitute rolled oats with quick-cooking oats and use different fruits if desired.
