Delicious and easy blueberry oatmeal bars that will satisfy your sweet tooth without requiring hours in the kitchen.
Ingredients
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup butter, melted
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup blueberries
- 1/4 cup sugar (for topping)
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 350°F. Grease an 8-inch square baking pan.
- In a bowl, mix oats, flour, brown sugar, baking powder, and salt. Stir in the melted butter until combined.
- Press half of the mixture into the bottom of the prepared pan to form a crust.
- In another bowl, combine blueberries, sugar, and lemon juice, then pour over the crust.
- Sprinkle remaining oat mixture over the blueberry filling.
- Bake for 25-30 minutes, or until the topping is golden brown.
- Let cool before slicing into bars.
Notes
For variations, you can substitute rolled oats with quick-cooking oats and use different fruits if desired.
