Description

Delicious and easy-to-make blueberry oatmeal bars, perfect for snack attacks or breakfast.


Ingredients

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup blueberries (fresh or frozen)
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking pan.
  2. In a large bowl, mix the oats, flour, brown sugar, melted butter, cinnamon, and salt until crumbly.
  3. Press half of the oat mixture into the bottom of the prepared pan to form a crust.
  4. In another bowl, mix the blueberries, granulated sugar, and lemon juice, then pour over the crust.
  5. Sprinkle the remaining oat mixture on top of the blueberries.
  6. Bake for 30-35 minutes or until golden brown.
  7. Allow to cool before cutting into bars.

Notes

These bars can be made with different fruits and are freezer-friendly for up to 3 months.
