Description
Delicious and easy-to-make blueberry oatmeal bars, perfect for snack attacks or breakfast.
Ingredients
- 2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 1 cup blueberries (fresh or frozen)
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking pan.
- In a large bowl, mix the oats, flour, brown sugar, melted butter, cinnamon, and salt until crumbly.
- Press half of the oat mixture into the bottom of the prepared pan to form a crust.
- In another bowl, mix the blueberries, granulated sugar, and lemon juice, then pour over the crust.
- Sprinkle the remaining oat mixture on top of the blueberries.
- Bake for 30-35 minutes or until golden brown.
- Allow to cool before cutting into bars.
Notes
These bars can be made with different fruits and are freezer-friendly for up to 3 months.
