Description

Delicious and easy-to-make blueberry muffins, perfect for breakfast or a snack.


Ingredients

  • 1 cup fresh blueberries (or frozen)
  • 1 and 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 cup milk (whole, skim, or almond)
  • 2 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine flour, sugar, baking powder, and a pinch of salt.
  3. In another bowl, whisk together melted butter, eggs, milk, and vanilla extract.
  4. Pour wet ingredients into dry ingredients and stir gently until combined, some lumps are okay.
  5. Fold in the blueberries carefully.
  6. Line a muffin tin with paper liners and fill each cup about 3/4 full with batter.
  7. Bake in the preheated oven for about 20 minutes or until a toothpick comes out clean.
  8. Let cool for a few minutes before serving.

Muffins can be stored in an airtight container at room temperature or frozen for future snacks.
