Description

Deliciously tender and moist blueberry cream cheese muffins that are easy to make and taste incredible.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cream cheese, softened
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1/2 cup milk


Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, beat together cream cheese, melted butter, eggs, and vanilla until smooth.
  4. Mix the wet ingredients into the dry ingredients until just combined. Fold in the blueberries gently.
  5. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool for a few minutes in the tin before transferring to a wire rack.

Notes

Avoid over mixing the batter, and use fresh blueberries for the best results.
