A cozy, creamy potato soup that is simple to make and incredibly comforting.
Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Chives or green onions for garnish
Instructions
- In a large pot, sauté the onion and garlic until translucent.
- Add the diced potatoes and broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Use an immersion blender to puree the soup to your desired consistency.
- Stir in the heavy cream, and season with salt and pepper.
- Serve hot, garnished with chives or green onions.
Notes
Skip the heavy cream for a lighter soup, or use coconut milk for a vegan option. Season boldly and enjoy toppings for extra flavor!
