Description

A cozy, creamy potato soup that is simple to make and incredibly comforting.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chives or green onions for garnish


Instructions

  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the diced potatoes and broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  3. Use an immersion blender to puree the soup to your desired consistency.
