Delightfully fluffy muffins packed with protein and bursting with blueberries, perfect for a tasty breakfast.
Ingredients
- 1 cup whole wheat flour
- 1/2 cup protein powder
- 1/2 cup rolled oats
- 1/4 cup honey or maple syrup
- 2 large eggs
- 1 cup Greek yogurt
- 1 cup fresh or frozen blueberries
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, protein powder, oats, baking soda, baking powder, and salt.
- In another bowl, beat the eggs, yogurt, honey (or maple syrup), and a dash of vanilla.
- Gently fold the dry ingredients into the wet ingredients until just combined.
- Fold in the blueberries carefully.
- Line your muffin tin with liners and scoop the mixture into each cup, filling them about 2/3 full.
- Bake in the preheated oven for 18-20 minutes or until a toothpick comes out clean.
- Let them cool in the pan for about five minutes before transferring to a cooling rack.
Notes
These muffins freeze beautifully. Microwave them for a few seconds when you want one!
