Ingredients
- 1 cup rolled oats
- 1 cup milk (dairy or non-dairy)
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup vegetable oil (or melted coconut oil)
- 2 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup fresh or frozen blueberries
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a bowl, combine rolled oats and milk and let them sit for 10 minutes.
- In another bowl, mix together flour, brown sugar, baking powder, baking soda, and salt.
- In the oat mixture, add vegetable oil, eggs, and vanilla extract, stirring until combined.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined; gently fold in the blueberries.
- Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow to cool slightly before transferring to a wire rack.
