Description

A rich and creamy Beef Stroganoff that is easy to prepare and perfect for a weeknight dinner.


Ingredients

  • 1 pound steak, thinly sliced (ribeye or sirloin)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 3 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 2/3 cup sour cream
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • Egg noodles for serving


Instructions

  1. Slice the steak into thin strips.
  2. Season the steak strips with salt and pepper.
  3. Sear the steak strips in a skillet over medium-high heat until browned, then remove and set aside.
  4. Add butter to the same pan, then add onions and garlic; cook until fragrant and starting to brown.
  5. Sprinkle in the flour and cook with the onions and garlic for at least 1 minute.
  6. Slowly pour in the beef broth while stirring.
  7. Add the sour cream and Dijon mustard, stirring until creamy and combined.
  8. Let simmer for 3 to 5 minutes until thickened; season to taste.
  9. Return the beef to the sauce for another 1-2 minutes.
  10. Serve over egg noodles.

Notes

Let the sour cream come to room temperature before adding to prevent curdling. Cooking in batches helps achieve a perfect sear on the beef.
