A simple and delicious beef stroganoff recipe that uses ground beef for a quick and creamy meal.
Ingredients
- 1 lb lean ground beef
- 8 oz fresh mushrooms, sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups low-sodium beef broth
- 1 cup full-fat sour cream
- 2 tbsp Dijon mustard
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and minced garlic; sauté until fragrant and translucent, about 3-4 minutes.
- Toss in the ground beef, seasoning with salt and pepper; cook until browned and crumbly, about 5-7 minutes.
- Stir in sliced mushrooms and cook until tender, about 5 minutes.
- Pour in beef broth and Dijon mustard; bring to a gentle simmer for 5 minutes.
- Reduce heat to low and incorporate sour cream until combined; avoid boiling.
- Serve over cooked egg noodles or rice, garnished with fresh parsley if desired.
Notes
This dish can be made in advance and stored in the fridge. It is best to freeze it before adding sour cream.
