A quick and easy Beef Stroganoff recipe that’s perfect for impressing guests or satisfying a comforting craving.
Ingredients
- 1 lb top sirloin steak (thinly sliced into strips)
- 2 Tbsp olive oil (extra virgin)
- 2 Tbsp unsalted butter
- ½ medium onion (finely chopped)
- ½ lb brown mushrooms (thickly sliced)
- 1 clove garlic (minced)
- 1 Tbsp all-purpose flour
- 1 cup beef broth
- ¾ cup heavy whipping cream
- ¼ cup sour cream
- 1 Tbsp Worcestershire sauce
- ½ tsp Dijon mustard
- ½ tsp salt
- ¼ tsp black pepper
- 1 Tbsp green onion or parsley (to garnish)
- 8 to 12 oz egg noodles (optional, to serve)
Instructions
- Heat a large pan over medium-high heat. Add the olive oil and, once hot, sear the beef in a single layer for about 1 minute per side until browned. Remove and set aside.
- In the same pan, add the butter and melt. Stir in the onions and mushrooms; cook for 6-8 minutes until the mushrooms release their moisture and onions are soft and golden.
- Add the minced garlic and cook for about a minute. Sprinkle in the flour and stir for another minute. Pour in the beef broth, scraping any bits off the bottom. Add heavy cream and let simmer until thickened.
- Mix a spoonful of the sauce with sour cream to prevent lumps, then add it to the pan along with Worcestershire sauce, Dijon mustard, salt, and pepper. Stir well and adjust seasoning.
- Return the beef and any juices back to the pan. Warm through on a low simmer, serving over egg noodles or your choice of base and garnishing with green onion or parsley.
Notes
For a gluten-free option, swap all-purpose flour for a gluten-free alternative and use gluten-free noodles.
