Description

A quick and easy Beef Stroganoff recipe that’s perfect for impressing guests or satisfying a comforting craving.


Ingredients

  • 1 lb top sirloin steak (thinly sliced into strips)
  • 2 Tbsp olive oil (extra virgin)
  • 2 Tbsp unsalted butter
  • ½ medium onion (finely chopped)
  • ½ lb brown mushrooms (thickly sliced)
  • 1 clove garlic (minced)
  • 1 Tbsp all-purpose flour
  • 1 cup beef broth
  • ¾ cup heavy whipping cream
  • ¼ cup sour cream
  • 1 Tbsp Worcestershire sauce
  • ½ tsp Dijon mustard
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 Tbsp green onion or parsley (to garnish)
  • 8 to 12 oz egg noodles (optional, to serve)


Instructions

  1. Heat a large pan over medium-high heat. Add the olive oil and, once hot, sear the beef in a single layer for about 1 minute per side until browned. Remove and set aside.
  2. In the same pan, add the butter and melt. Stir in the onions and mushrooms; cook for 6-8 minutes until the mushrooms release their moisture and onions are soft and golden.
  3. Add the minced garlic and cook for about a minute. Sprinkle in the flour and stir for another minute. Pour in the beef broth, scraping any bits off the bottom. Add heavy cream and let simmer until thickened.
  4. Mix a spoonful of the sauce with sour cream to prevent lumps, then add it to the pan along with Worcestershire sauce, Dijon mustard, salt, and pepper. Stir well and adjust seasoning.
  5. Return the beef and any juices back to the pan. Warm through on a low simmer, serving over egg noodles or your choice of base and garnishing with green onion or parsley.

Notes

For a gluten-free option, swap all-purpose flour for a gluten-free alternative and use gluten-free noodles.
