Description

A warm, creamy beef stroganoff casserole that’s easy to make and perfect for comforting meals.


Ingredients

  • 1 lb beef (sliced)
  • 1 onion (chopped)
  • 2 cups mushrooms (sliced)
  • 3 cups egg noodles (cooked)
  • 1 can cream of mushroom soup
  • 1 cup sour cream
  • 1 cup beef broth
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup shredded cheese (optional)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onions and sauté until translucent (about 3-4 minutes).
  3. Add sliced mushrooms and beef to the skillet. Cook until the beef is browned and mushrooms are tender (about 5-7 minutes).
  4. In a separate bowl, mix cream of mushroom soup, sour cream, and beef broth. Stir in the cooked egg noodles.
  5. Combine the beef mixture with the noodle mixture. Season with salt and pepper to taste.
  6. Pour the mixture into a greased casserole dish. Top with shredded cheese if desired.
  7. Bake for 25-30 minutes or until heated through and the cheese is bubbly and golden.
  8. Serve warm and enjoy!

You can assemble this in advance and refrigerate it for later. Adjust baking time if making ahead.
